Fall roasted veggie medley is a perfect way to ground the body through food. Root veggies are in season and it’s ideal we eat with the seasons. I love squashes and tried a new recipe I loved and want to share it with you! If your cooking for one or a family modify the amount you will need. Organic ingredients are recommended for food purity. Feel free to add other squash styles as well. Delicata is one of my favorites! So sweet it’s like candy! 

1 apple cut into quarters 

8-10 Brussel sprouts halved 

2 small delicata squash (take seeds out)

1 sweet onion chopped 

1 package baby Bella mushrooms chopped 

Dried cranberries 

Fresh sage (2-3) leaves chopped 

Salt/pepper to taste 

Generous drizzle of extra virgin olive oil

Add all the veggies to a baking pan and toss w olive oil. Bake at 350 degrees for 45min-1 hour or until soft. I served this as a side dish with grass fed steaks. Great dish for Thanksgiving too! Leave me your comments and let me know how you liked it. As we say in Greek “Kali Orexi,” eat well!
